
Hello :) I've been' on the gooo. I needed a cookie break. Thought I'd try making a cookie I have never made before. Results TASTY! My family thought so too! It's now on my faves list. The cookie I chose to make are called Russian Tea Cakes, also known as Snow Balls, Mexican Wedding Cookies, and who knows what other names it is known by.The sifter shown is not dirty its just old :) The recipe is as follows
Russian Tea Cakes
1c butter at room temp
2 tsp vanilla extract (I substituted for almond extract and added 1/4 tsp vanilla extract)
1/2c sifted confectioners sugar, plus more for rolling cookies
2c flour
1/4 tsp salt
1c finely chopped pecans or walnuts (I substituted for almonds and I toasted them in a pan on the stove.)
Directions
Preheat oven to 325 degrees
Cream butter in large mixing bowl. Add vanilla or almond extract(s) then gradually add the 1/2 cupconfectioners sugar, beating until light and fluffy.
Sift the flour, measure, then sift again with salt (sifting is very important). Add gradually to the butter mixture. Add nuts and mix well.
Shape the dough into 1-inch balls and place 2 inches apart on ungreased baking sheets. Flatten slightly using the bottom of a glass, then bake for 20 minutes, or until edges are very lightly browned. Remove the cookies from the baking sheets and roll in powdered sugar while still hot. Cool on wire racks and roll cookies again in powdered sugar before serving.
Once completely cooled, cookies may be stored in airtight containers for up to 1 week.

ReplyDeleteYour cookies look absolutely lovely. I have made them before, and they are truly delicious. My all time favorite cookie is quite plain. They are a Greek butter cookie called kourlourakia. These cookies would be shaped in twists or circles and topped with sesame seeds. Those white cookies that you whipped up are called kourambiedes in Greece, and are probably the most popular Greek cookie made for the Christmas and Easter holidays. I'm really in the mood for these now!

Hey Aimee! These are my most favorite cookies in the world! :) Looks like you did a great job on them. I like the idea of substituting the almond extract for part of the vanilla. I love the smell of the almond extract...I use it in my chocolate covered cherries and could just sniff it all day! lol :)
